Ingredients: for 4 persons

1l chokeberry juice without sugar

2,5 teaspoon agar-agar powder

2 pears

pinch of ground cloves

Preparation

Jelly

 Pour almost all the juice into the pot and boil. The rest of the juice mix in a cup with agar until it it dissolves. When the juice boils, gradually pour the mixture of the juice with agar, stirring constantly to dissolve well, reduce the heat and cook for another few minutes. Remove from the heat , pour out into 4 bowls and leave to cool.

Mousse

 Wash and peel the pears. Cut into medium-sized pieces and remove inedible parts. Pour a bit of hot water into a pan and add the pears. Add a pinch of ground cloves and cook for a few minutes until the pears are stewed. Then remove from the heat and mix using a blender.

At the end: cut cold jelly into pieces and put it in the pear mousse. Serve with a  piece of the pear on the top as decoration.
