Ingredients: for 1 person

5 teaspoons amaranth grains
1 tablespoon almond butter
a handful of chopped watercress/broccoli or parsley

Preparation:

Put the amaranth in about a cup of hot water and cook over medium heat for about 5 minutes, then reduce the heat to the lowest setting and cook about 10 minutes more. Just before turning off the cereal, put the almond butter in ½ cup of hot water and stir until you get a smooth sauce. Then add the sauce and chopped watercress to the cereal and mix it well. You can also add a litle boiling water, so that the dish will be in a semi-liquid state and put it into a thermos. It will taste the best after 3-4 hours, when it has absorbed all the water and butter and it is still warm. A salad with grated carrots and ½ kohlrabi goes very well with this dish.
